Cattle buyers need to estimate carcase weight when purchasing live cattle. However, the proportion of carcase weight in the live animals (the dressing %) varies widely according to their degree of gut fill. Cattle in saleyards very widely in gut fill, and thus dressing %, as a consequence of differences in time since last eating and drinking on the differing farms of origin.
